ABOUT

A cellar built over time

The Cave is the result of two decades of exploration across the world’s most compelling wine regions.
It brings together around ten thousand bottles — artisanal wines, historic producers, and once-overlooked estates that have since become cult references among collectors.

Each bottle has been selected for its integrity, its story, and its ability to age with grace.
From iconic appellations to radical, independent voices, the cellar reflects a personal, evolving vision of wine — one shaped by curiosity rather than trends.

The Cave exists as an extension of SOTA: a place where wine is not just stored, but activated — through conversation, curation, and shared experiences.

BOTTLE SHOP

Curated bottles, released with intention

The Bottle Shop offers access to a rotating selection from The Cave’s cellar.
Rather than a fixed catalogue, bottles are released through periodic, thematic curations, each responding to a specific moment, season, or idea.

Selections may focus on a single region, a producer’s evolution across vintages, forgotten grapes, or wines ready to drink now after years of rest.

Available directly on site, the shop is designed for those looking to discover something rare, meaningful, and thoughtfully chosen — whether for immediate enjoyment or long-term keeping.

WINE CLUB

A space for conversation, not convention

The Wine Club is at the heart of The Cave.
Members are invited to take part in a program of tastings, gatherings, and small events designed to foster dialogue and build a genuine community.

The focus is on exploring the wine world through a modern, independent lens — free from hierarchy, rigid rules, or classic tasting formulas.

Tastings can range widely:
from grower Champagne and Grand Cru Burgundy
to esoteric bottlings from rare, indigenous grapes
and wines made by producers pushing the boundaries of technique and flavor.

Each encounter is an opportunity to learn, exchange perspectives, and rethink how wine fits into contemporary culture.

MANIFESTO

A cellar is never just a cellar.

It is time, held still.
It is patience, repetition, and instinct.
It is the decision to wait — and to know when not to.

Our cave was built slowly, over years of searching, tasting, and returning.
Not to collect trophies, but to gather bottles that mean something — wines shaped by place, by hands, by seasons, by risk.

We believe wine should not intimidate.
Nor should it rush.
It deserves attention, context, and conversation.

The cave exists for those who are curious rather than certain.
For people who care more about substance than status, and more about sharing than owning.

Here, classics sit comfortably beside radical ideas.
Old vintages coexist with new voices.
What matters is not the label, but the intention behind it.

We curate, release, and open bottles with care — following moments, not markets.
Some wines are ready now.
Others are waiting.

The cave is not about drinking more.
It is about drinking better — together.
